While I'm neither a vegan nor vegetarian, I can certainly appreciate tofu in a variety of ways. I've made vegan lasagna (delicious!) as well as a carob tofu pie. The pie was not successful visually, but it tasted very good. It's a terrific ingredient in vegan hot and sour soup, and other Asian dishes. So if people don't like the taste or texture...don't eat it. But why vilify a great source of protein that people have been eating for centuries? One might want to give it a try and dismiss moronic comments by certain people.

We put extra firm tofu in anything! Tomato sauce pasta with veggies, Italian or Moroccan soup, farro bowls. Everything is better with some tofu!
